Description

A refreshing summer salad featuring juicy watermelon, sweet peaches, tart blackberries, and creamy burrata, all brought together with a tangy balsamic honey drizzle.


Ingredients

  • 1 small seedless watermelon, cut into cubes
  • 2 ripe peaches, pitted and cubed
  • 1 cup fresh blackberries
  • 8 ounces burrata cheese, torn into pieces
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 2 tablespoons extra-virgin olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh mint leaves for garnish


Instructions

  1. In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer over medium-low heat, then reduce to low and cook for 5-7 minutes until slightly thickened. Remove from heat and let cool.
  2. In a large serving platter, arrange watermelon cubes, peach cubes, blackberries, and torn burrata pieces in an even layer.
  3. Drizzle the olive oil over the fruit and cheese, then season with salt and pepper.
  4. Drizzle the cooled balsamic honey mixture over the salad.
  5. Garnish with fresh mint leaves and serve immediately.

Notes

You can customize the seasonings to taste. For extra flavor, add a pinch of chili flakes or a squeeze of lime juice.
