A refreshing summer salad featuring juicy watermelon, sweet peaches, tart blackberries, and creamy burrata, all brought together with a tangy balsamic honey drizzle.
Ingredients
- 1 small seedless watermelon, cut into cubes
- 2 ripe peaches, pitted and cubed
- 1 cup fresh blackberries
- 8 ounces burrata cheese, torn into pieces
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 2 tablespoons extra-virgin olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh mint leaves for garnish
Instructions
- In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer over medium-low heat, then reduce to low and cook for 5-7 minutes until slightly thickened. Remove from heat and let cool.
- In a large serving platter, arrange watermelon cubes, peach cubes, blackberries, and torn burrata pieces in an even layer.
- Drizzle the olive oil over the fruit and cheese, then season with salt and pepper.
- Drizzle the cooled balsamic honey mixture over the salad.
- Garnish with fresh mint leaves and serve immediately.
