Description

A rich and comforting pasta dish featuring cheese ravioli bathed in a creamy Tuscan-inspired sauce with fresh spinach, sun-dried tomatoes, and Parmesan. Quick enough for a weeknight yet elegant for entertaining.


Ingredients

  • 1 (20 oz) package refrigerated cheese ravioli
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes (oil-packed), drained and chopped
  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 3 cups fresh spinach
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • Red pepper flakes (optional, for heat)


Instructions

  1. Bring a large pot of salted water to a boil. Cook ravioli according to package directions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and cook for about 1 minute until fragrant.
  3. Stir in sun-dried tomatoes and cook for 1-2 minutes.
  4. Pour in heavy cream and chicken broth. Bring to a gentle simmer, then add Parmesan cheese and stir until melted and smooth.
  5. Season with dried basil, oregano, salt, pepper, and red pepper flakes if using.
  6. Add fresh spinach to the sauce and cook until wilted, about 2-3 minutes.
  7. Add the cooked ravioli to the skillet and gently toss to coat with the sauce. Cook for 1-2 minutes until heated through.
  8. Serve immediately, garnished with extra Parmesan if desired.

Notes

You can customize the seasonings to taste. Add cooked chicken or shrimp for extra protein, or substitute kale for spinach.
