Description

Juicy meatballs packed with spinach and garlic, each one hiding a gooey center of melted mozzarella. Perfect for a hearty dinner served over pasta, in a sandwich, or with a side of marinara.


Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten
  • 3 cloves garlic, minced
  • 1 cup fresh spinach, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 8 small cubes of mozzarella cheese (about 1/2 inch each)


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix together the ground beef, breadcrumbs, Parmesan, egg, garlic, spinach, salt, pepper, and Italian seasoning until well combined. Do not overmix.
  3. Take a small handful of the meat mixture and flatten it in your palm. Place one cube of mozzarella in the center, then shape the meat around the cheese, rolling into a ball. Repeat with remaining mixture and cheese.
  4. Place the meatballs on the prepared baking sheet, spacing them evenly.
  5. Bake for 20-25 minutes, or until the meatballs are cooked through and the tops are golden brown.
  6. Let rest for 5 minutes before serving. The cheese will be hot and melted.

Notes

You can customize the seasonings to taste. For extra flavor, try adding a pinch of red pepper flakes or a few chopped fresh basil leaves. If you prefer, you can pan-sear the meatballs in oil before baking for a crunchier exterior.
