Ingredients
- 4 boneless, skinless chicken breasts
- 8 oz cream cheese, softened
- 1 cup fresh spinach, chopped
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1/2 cup chicken broth (optional, for moisture)
Instructions
- Preheat oven to 375°F (190°C).
- In a medium bowl, combine cream cheese, chopped spinach, Parmesan cheese, garlic, Italian seasoning, salt, and pepper. Mix until well blended.
- Using a sharp knife, cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
- Stuff each chicken breast with the cream cheese mixture, dividing evenly. Secure with toothpicks if needed.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side, until golden brown.
- If using, add chicken broth to the skillet. Transfer the skillet to the preheated oven.
- Bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Let rest for 5 minutes before serving. Remove toothpicks before serving.
Notes
You can customize the seasonings to taste. For a lighter version, use reduced-fat cream cheese and reduce the Parmesan. Add a squeeze of lemon juice for brightness.
