Ingredients
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 (15 ounce) can cannellini beans, drained and rinsed
- 10 ounces fresh spinach
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 1 tablespoon lemon juice
- Grated Parmesan cheese for serving (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and cook until fragrant, about 30 seconds.
- Add the drained white beans and cook, stirring occasionally, until heated through, about 3 minutes.
- Add the spinach in batches, stirring gently until wilted.
- Season with red pepper flakes (if using), salt, and black pepper.
- Remove from heat and stir in lemon juice.
- Serve immediately, topped with Parmesan cheese if desired.
