Description

A simple, hearty, and nutritious one-pan dish featuring tender spinach and creamy white beans sautéed with garlic and a splash of lemon. Perfect as a quick weeknight dinner or a satisfying side.


Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 10 ounces fresh spinach
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 tablespoon lemon juice
  • Grated Parmesan cheese for serving (optional)


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and cook until fragrant, about 30 seconds.
  3. Add the drained white beans and cook, stirring occasionally, until heated through, about 3 minutes.
  4. Add the spinach in batches, stirring gently until wilted.
  5. Season with red pepper flakes (if using), salt, and black pepper.
  6. Remove from heat and stir in lemon juice.
  7. Serve immediately, topped with Parmesan cheese if desired.
