Description

A tender, slow-braised beef roast with a sweet and tangy cranberry balsamic glaze, perfect for a hearty family dinner.


Ingredients

  • 3 lbs beef chuck roast
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 1 cup dried cranberries
  • 1/2 cup balsamic vinegar
  • 1/4 cup brown sugar
  • 1 cup beef broth
  • 2 sprigs fresh rosemary
  • 3 cloves garlic, minced


Instructions

  1. Season the beef roast generously with salt and pepper.
  2. Heat olive oil in a large heavy-bottomed pot over medium-high heat. Sear the roast on all sides until deeply browned, about 4 minutes per side.
  3. In a small bowl, combine dried cranberries, balsamic vinegar, and brown sugar. Let sit for 5 minutes.
  4. Pour the cranberry mixture into the pot with the roast. Add beef broth, rosemary sprigs, and minced garlic.
  5. Bring to a simmer, then reduce heat to low, cover, and cook for 2.5 to 3 hours until the beef is fork-tender.
  6. Remove the roast and set aside. Skim excess fat from the sauce, then simmer uncovered for 10 minutes to thicken into a glaze.
  7. Slice the roast against the grain and drizzle with the cranberry balsamic glaze before serving.

Notes

You can customize the seasonings to taste. For extra depth, add a splash of red wine along with the broth.
