Description

Pan-seared scallops with a bright and tangy lime cilantro sauce, perfect for a light yet indulgent main course.


Ingredients

  • 1 lb large sea scallops, patted dry
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1/4 cup fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 tsp lime zest
  • Salt and pepper to taste
  • 1/4 cup chicken or vegetable broth
  • 1 tbsp honey


Instructions

  1. Season scallops with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over high heat until shimmering.
  3. Add scallops in a single layer and sear for 2-3 minutes per side until golden brown. Remove and set aside.
  4. Reduce heat to medium and add butter, garlic, and lime zest. Cook for 30 seconds.
  5. Stir in lime juice, broth, and honey. Simmer for 2 minutes until slightly thickened.
  6. Stir in cilantro and return scallops to the pan. Toss gently to coat.
  7. Serve immediately over rice or with crusty bread.
