Description
Pan-seared scallops with a bright and tangy lime cilantro sauce, perfect for a light yet indulgent main course.
Ingredients
- 1 lb large sea scallops, patted dry
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 1/4 cup fresh lime juice
- 1/4 cup chopped fresh cilantro
- 2 cloves garlic, minced
- 1 tsp lime zest
- Salt and pepper to taste
- 1/4 cup chicken or vegetable broth
- 1 tbsp honey
Instructions
- Season scallops with salt and pepper on both sides.
- Heat olive oil in a large skillet over high heat until shimmering.
- Add scallops in a single layer and sear for 2-3 minutes per side until golden brown. Remove and set aside.
- Reduce heat to medium and add butter, garlic, and lime zest. Cook for 30 seconds.
- Stir in lime juice, broth, and honey. Simmer for 2 minutes until slightly thickened.
- Stir in cilantro and return scallops to the pan. Toss gently to coat.
- Serve immediately over rice or with crusty bread.
