Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 avocados, diced
- 1 cup cooked rice (white or brown)
- 1 mango, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and minced
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- For the lime-chili sauce: 1/4 cup Greek yogurt, 1 tablespoon lime juice, 1 teaspoon chili powder, 1/4 teaspoon salt
Instructions
- In a small bowl, combine mango, cherry tomatoes, red onion, cilantro, jalapeño, and 1 tablespoon lime juice to make the salsa. Set aside.
- In another small bowl, whisk together Greek yogurt, 1 tablespoon lime juice, 1 teaspoon chili powder, and 1/4 teaspoon salt to make the lime-chili sauce. Refrigerate until ready to use.
- Season shrimp with 1 tablespoon olive oil, 1 teaspoon chili powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Heat a skillet over medium-high heat. Cook shrimp for 2-3 minutes per side until pink and opaque.
- To assemble bowls, divide cooked rice among bowls. Top with diced avocado, shrimp, and mango salsa. Drizzle with lime-chili sauce and serve immediately.
Notes
You can customize the seasonings to taste. For extra heat, add additional jalapeño or a dash of cayenne to the sauce.
