Description

Fresh and vibrant bowls featuring succulent shrimp, creamy avocado, and a tangy mango salsa, all drizzled with a zesty lime-chili sauce for a perfect balance of flavors.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup cooked white rice or quinoa
  • 1 mango, diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeno, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil


Instructions

  1. In a small bowl, combine diced mango, red onion, jalapeno, cilantro, and 1 tablespoon lime juice. Season with salt and set aside as mango salsa.
  2. Season shrimp with chili powder, salt, and pepper. Heat olive oil in a skillet over medium-high heat and cook shrimp for 2-3 minutes per side until pink and opaque.
  3. In another bowl, mix remaining lime juice with honey to create the lime-chili sauce base. Adjust seasoning with salt and chili powder if desired.
  4. Assemble bowls by dividing cooked rice or quinoa among serving dishes. Top with diced avocado, cooked shrimp, and mango salsa.
  5. Drizzle lime-chili sauce over each bowl and serve immediately.

Notes

You can customize the seasonings to taste. For extra heat, add more chili powder or sliced jalapeno to the sauce.
