Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 ripe avocados, sliced
- 1 cup cooked quinoa or rice
- 1 mango, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- 2 tbsp olive oil
- 1 tsp chili powder
- Salt and pepper to taste
- 1/4 cup Greek yogurt or sour cream
- 1 tbsp honey
Instructions
- Prepare the mango salsa by combining diced mango, red onion, jalapeño, cilantro, and juice of 1 lime in a bowl. Season with salt and set aside.
- In a small bowl, whisk together Greek yogurt, remaining lime juice, honey, and chili powder to make the lime-chili sauce. Adjust seasoning as needed.
- Heat olive oil in a skillet over medium-high heat. Season shrimp with salt, pepper, and chili powder. Cook shrimp for 2-3 minutes per side until pink and cooked through.
- Assemble bowls by dividing cooked quinoa or rice among four bowls. Top with shrimp, avocado slices, and mango salsa.
- Drizzle with lime-chili sauce and garnish with extra cilantro if desired. Serve immediately.
