Description

A twist on the classic Caprese salad, these elegant towers feature roasted tomatoes, fresh mozzarella, and basil, drizzled with balsamic reduction.


Ingredients

  • 4 large tomatoes, halved
  • 1 ball fresh mozzarella, sliced into 8 rounds
  • 8 fresh basil leaves
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1/4 cup balsamic reduction
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place tomato halves cut side up on the baking sheet. Drizzle with 2 tablespoons olive oil and season with salt and pepper.
  3. Roast tomatoes for 20-25 minutes until slightly caramelized. Let cool slightly.
  4. On a serving plate, layer a roasted tomato half (cut side down), followed by a slice of mozzarella, and a basil leaf. Repeat for a second layer, ending with a tomato half.
  5. Drizzle with remaining olive oil and balsamic reduction. Serve immediately.
