Elegant, layered stacks of roasted beets, creamy blue cheese, and fresh pear slices, drizzled with a sweet-tangy balsamic glaze for a stunning appetizer or light meal.
Ingredients
- 3 medium beets (red or golden), peeled and sliced into 1/4-inch rounds
- 1 ripe pear, cored and thinly sliced
- 4 oz blue cheese, crumbled
- 1/2 cup balsamic vinegar
- 2 tbsp honey
- 2 tbsp olive oil
- Salt and black pepper to taste
- Fresh arugula for serving
- Optional: chopped walnuts for garnish
Instructions
- Preheat oven to 400°F (200°C). Toss beet slices with olive oil, salt, and pepper, then arrange on a baking sheet. Roast for 25-30 minutes until tender. Let cool.
- While beets roast, simmer balsamic vinegar and honey in a small saucepan over medium heat until reduced by half and syrupy, about 10 minutes. Set aside to cool.
- On a serving plate, layer a beet slice, a few pear slices, and a sprinkle of blue cheese. Repeat to form 2-3 layers per tower, ending with cheese.
- Drizzle towers with balsamic glaze, garnish with arugula and optional walnuts. Serve immediately.
