Description

A quick and flavorful pasta dish featuring tender ravioli tossed with fresh asparagus, cherry tomatoes, and fragrant garlic and herbs. Perfect for a weeknight dinner that feels special.


Ingredients

  • 1 (20-ounce) package refrigerated cheese ravioli
  • 1 tablespoon olive oil
  • 1 pound asparagus, trimmed and cut into 1-inch pieces
  • 2 cups cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)


Instructions

  1. Bring a large pot of salted water to a boil. Cook ravioli according to package directions until al dente. Drain, reserving 1/2 cup pasta water.
  2. While ravioli cooks, heat olive oil in a large skillet over medium-high heat. Add asparagus and cook for 3-4 minutes, until tender-crisp.
  3. Add cherry tomatoes and garlic to the skillet. Cook for 2-3 minutes, until tomatoes begin to soften.
  4. Stir in basil, parsley, and red pepper flakes (if using). Season with salt and pepper.
  5. Add cooked ravioli to the skillet along with a splash of reserved pasta water. Toss gently to combine and heat through.
  6. Serve immediately, topped with Parmesan cheese if desired.

Notes

You can customize the seasonings to taste. For a richer dish, add a tablespoon of butter when tossing the ravioli.
