Description

Decadent chocolate cupcakes with a gooey raspberry-filled molten center, perfect for a sweet treat.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 12 fresh raspberries
  • 4 oz dark chocolate, chopped
  • Powdered sugar for dusting


Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream butter and sugar until fluffy. Beat in eggs one at a time, then add vanilla.
  4. Alternately mix in dry ingredients and milk until just combined.
  5. Fill each liner halfway with batter, place a raspberry in the center, then top with more batter to cover.
  6. Bake for 18-20 minutes until set but still soft in the center. Let cool slightly.
  7. Serve warm, dusted with powdered sugar and optionally drizzled with melted chocolate.
