Description
Decadent chocolate cupcakes with a gooey raspberry-filled molten center, perfect for a sweet treat.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 12 fresh raspberries
- 4 oz dark chocolate, chopped
- Powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
- In another bowl, cream butter and sugar until fluffy. Beat in eggs one at a time, then add vanilla.
- Alternately mix in dry ingredients and milk until just combined.
- Fill each liner halfway with batter, place a raspberry in the center, then top with more batter to cover.
- Bake for 18-20 minutes until set but still soft in the center. Let cool slightly.
- Serve warm, dusted with powdered sugar and optionally drizzled with melted chocolate.
