A delightful vegetarian dish featuring salty halloumi cheese encrusted with crunchy pistachios, pan-fried to golden perfection, and drizzled with honey and fresh thyme.
Ingredients
- 8 oz halloumi cheese, sliced into 1/2-inch thick pieces
- 1/2 cup shelled pistachios, finely chopped
- 2 tablespoons all-purpose flour
- 1 large egg, beaten
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 teaspoon fresh thyme leaves, plus more for garnish
- Flaky sea salt, for finishing
Instructions
- Place the chopped pistachios in a shallow bowl. In another shallow bowl, place the flour. In a third bowl, beat the egg.
- Pat the halloumi slices dry with paper towels. Dredge each slice first in the flour, shaking off excess, then dip into the beaten egg, and finally coat evenly with the chopped pistachios, pressing gently to adhere.
- Heat olive oil in a large non-stick skillet over medium heat. Add the pistachio-crusted halloumi slices in a single layer (work in batches if needed). Cook for 2-3 minutes per side, until golden brown and crisp.
- Remove the halloumi to a serving plate. Drizzle immediately with honey and sprinkle with fresh thyme leaves and a pinch of flaky sea salt.
- Serve warm, garnished with additional thyme if desired.
