A simple and flavorful side dish featuring tender roasted zucchini, yellow squash, and cherry tomatoes, topped with melted Parmesan cheese.
Ingredients
- 2 medium zucchinis, sliced
- 2 medium yellow squash, sliced
- 1 pint cherry tomatoes, halved
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine zucchini, yellow squash, and cherry tomatoes.
- Drizzle with olive oil, add minced garlic, oregano, salt, and pepper. Toss to coat evenly.
- Spread the vegetables in a single layer on a baking sheet lined with parchment paper.
- Roast for 20 minutes, then sprinkle Parmesan cheese evenly over the top.
- Continue roasting for another 10 minutes, until vegetables are tender and cheese is golden.
- Remove from oven, garnish with fresh basil if desired, and serve warm.
