Ingredients
- 1 lb ground turkey
- 1/2 cup breadcrumbs
- 1 large egg, lightly beaten
- 2 cloves garlic, minced
- 2 tablespoons za'atar spice blend
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cooked quinoa
- 1 English cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup kalamata olives, sliced
- 1/4 cup fresh parsley, chopped
- 1/2 cup Greek yogurt
- 1 tablespoon lemon juice
- 1/2 teaspoon dried dill
- 2 tablespoons olive oil
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, mix ground turkey, breadcrumbs, egg, garlic, za'atar, salt, and pepper until combined. Shape into 1-inch meatballs and place on prepared sheet.
- Bake meatballs for 18-20 minutes, until cooked through and golden.
- Meanwhile, prepare the yogurt sauce: mix Greek yogurt, lemon juice, dill, and a pinch of salt.
- Assemble bowls with a base of quinoa, then top with cucumber, tomatoes, red onion, olives, meatballs, and parsley.
- Drizzle yogurt sauce and olive oil over each bowl before serving.
Notes
You can customize the seasonings to taste. For a gluten-free option, use gluten-free breadcrumbs or almond flour.
