Description
A quick and flavorful stir fry with ground beef, colorful vegetables, and aromatic Mediterranean spices. Perfect for a healthy weeknight dinner.
Ingredients
- 1 lb ground beef
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 1/2 cup Kalamata olives, pitted and halved
- 1/2 cup crumbled feta cheese
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
- Add onion and garlic, sauté for 2-3 minutes until softened.
- Stir in bell peppers and zucchini. Cook for 5-7 minutes until vegetables are tender-crisp.
- Season with oregano, basil, cumin, salt, and pepper. Mix well.
- Fold in Kalamata olives and cook for another minute.
- Remove from heat and top with crumbled feta cheese and fresh parsley. Serve immediately.
Notes
You can customize the seasonings to taste. Serve over rice, quinoa, or with warm pita bread.
