Description

A vibrant, healthy bowl featuring herbed lamb or beef meatballs, creamy tzatziki, smooth hummus, and a crunchy tomato-cucumber salad. Perfect for a satisfying, well-balanced meal.


Ingredients

  • 1 lb ground lamb or beef
  • 1/2 cup breadcrumbs
  • 1 egg, beaten
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 cup plain Greek yogurt
  • 1/2 cucumber, grated and drained
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill, chopped
  • 1 cup prepared hummus
  • 2 large tomatoes, diced
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives
  • 1/4 cup crumbled feta cheese
  • 2 tbsp red wine vinegar
  • 3 tbsp olive oil
  • Fresh parsley for garnish


Instructions

  1. Prepare the meatballs: In a bowl, combine ground meat, breadcrumbs, egg, garlic, oregano, cumin, salt, and pepper. Mix gently and form into 1-inch meatballs.
  2. Heat 2 tbsp olive oil in a large skillet over medium heat. Cook meatballs in batches, turning occasionally, until browned and cooked through (about 8-10 minutes). Set aside.
  3. Make the tzatziki: In a small bowl, mix Greek yogurt, grated cucumber, lemon juice, dill, and a pinch of salt. Refrigerate until ready to serve.
  4. Prepare the village salad: In a separate bowl, combine diced tomatoes, cucumber, red onion, olives, and feta. Drizzle with red wine vinegar and 3 tbsp olive oil. Toss gently.
  5. Assemble the bowls: Spread a generous spoonful of hummus on the base of each bowl. Add a portion of village salad and 4-5 meatballs. Top with tzatziki and garnish with fresh parsley.

Notes

You can customize the seasonings to taste. For a lighter version, use ground turkey or chicken. The tzatziki can be made a day ahead for better flavor.
