Description

A flavorful and easy appetizer featuring creamy mozzarella balls, tangy artichokes, and briny olives marinated in herbs and olive oil.


Ingredients

  • 8 oz fresh mozzarella balls (bocconcini or ciliegine)
  • 1 can (14 oz) artichoke hearts, drained and quartered
  • 1 cup mixed olives (such as Kalamata and green olives)
  • 1/2 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, thinly sliced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. In a medium bowl, combine mozzarella balls, artichoke hearts, and olives.
  2. In a small bowl, whisk together olive oil, red wine vinegar, garlic, oregano, red pepper flakes, salt, and pepper.
  3. Pour the marinade over the cheese and vegetable mixture and toss gently to coat.
  4. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  5. Before serving, sprinkle with fresh parsley and toss again. Serve chilled or at room temperature.
