A light and flavorful keto-friendly meal featuring juicy shrimp, crisp vegetables, and a tangy sauce wrapped in fresh lettuce leaves, perfect for quick meal prep.
Ingredients
- 1 lb raw shrimp, peeled and deveined
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 red bell pepper, thinly sliced
- 1 cucumber, julienned
- 1 carrot, julienned
- 1/4 cup green onions, chopped
- 1/4 cup cilantro, chopped
- 8 large lettuce leaves (such as butter or romaine)
- 2 tbsp soy sauce or coconut aminos
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add garlic and ginger, sauté for 1 minute until fragrant.
- Add shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque. Season with salt and pepper, then remove from heat.
- In a small bowl, whisk together soy sauce, rice vinegar, and sesame oil to make the sauce.
- Assemble wraps by placing a lettuce leaf flat, adding shrimp, bell pepper, cucumber, carrot, green onions, and cilantro. Drizzle with sauce before serving.
