Description
A hearty and healthy bowl packed with marinated grilled chicken, fresh veggies, quinoa, creamy tzatziki, and tangy feta cheese.
Ingredients
- 1 lb boneless skinless chicken breasts
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup quinoa, rinsed
- 2 cups water or chicken broth
- 1 cucumber, diced
- 1 pint cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, halved
- 1/2 cup crumbled feta cheese
- 1/2 cup tzatziki sauce
- Fresh parsley for garnish
Instructions
- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken and marinate for at least 30 minutes.
- While chicken marinates, cook quinoa: combine quinoa and water in a saucepan, bring to a boil, reduce heat, cover, and simmer for 15 minutes. Fluff with a fork.
- Grill chicken over medium-high heat for 6-7 minutes per side until cooked through. Let rest for 5 minutes, then slice.
- Assemble bowls: divide quinoa among bowls, top with sliced chicken, cucumber, tomatoes, red onion, olives, and feta.
- Drizzle with tzatziki sauce and garnish with fresh parsley. Serve immediately.
Notes
You can customize the seasonings to taste. For extra heat, add a pinch of red pepper flakes to the marinade.
