Description
A delicious and satisfying vegetarian dish featuring layers of zucchini, creamy ricotta, and marinara sauce, all topped with melted mozzarella cheese. Perfect for a weeknight dinner or a hearty lunch.
Ingredients
- 2 medium zucchinis, sliced into 1/4-inch rounds
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil.
- In a medium bowl, combine the ricotta cheese, Parmesan cheese, egg, minced garlic, oregano, salt, and pepper. Mix well until smooth.
- Spread a thin layer of marinara sauce on the bottom of the prepared baking dish.
- Layer half of the zucchini slices over the sauce, slightly overlapping them.
- Spread half of the ricotta mixture over the zucchini layer, then top with half of the remaining marinara sauce.
- Repeat the layers with the remaining zucchini, ricotta mixture, and marinara sauce.
- Sprinkle the shredded mozzarella cheese evenly over the top.
- Bake for 30 minutes, or until the zucchini is tender and the cheese is bubbly and golden.
- Let it rest for 5 minutes before serving. Serve warm with additional marinara sauce if desired.
Notes
You can customize the seasonings to taste. Feel free to add fresh basil or red pepper flakes for extra flavor.
