Ingredients
- 1 cup jasmine rice
- 1 1/2 cups water
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons honey
- 2 tablespoons fresh lime juice
- 1 tablespoon soy sauce
- 1 clove garlic, minced
- 1 teaspoon lime zest
- 1 avocado, sliced
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- Cook jasmine rice in water according to package directions, then let cool slightly and season with salt.
- In a small bowl, whisk together honey, lime juice, soy sauce, garlic, and lime zest.
- Season shrimp with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook shrimp until pink, about 2 minutes per side.
- Pour honey-lime mixture over shrimp and toss to coat, cooking for 1 more minute until glaze thickens.
- To assemble, place a ring mold on a plate. Layer rice, then avocado slices, then shrimp. Press gently and remove mold. Garnish with cilantro.
