Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup tahini
- 3 tablespoons fresh lemon juice
- 2 cloves garlic, minced
- 2 tablespoons extra virgin olive oil, plus more for drizzling
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup water (adjust for desired consistency)
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup crumbled feta cheese
- 1 tablespoon fresh parsley, chopped
Instructions
- In a food processor, combine chickpeas, tahini, lemon juice, garlic, olive oil, salt, and pepper. Blend until smooth, adding water gradually until the hummus reaches your preferred creamy texture.
- Spread the hummus evenly on a serving plate or shallow bowl.
- Top the hummus with cherry tomatoes, cucumber, red onion, Kalamata olives, and crumbled feta cheese.
- Drizzle with additional olive oil and sprinkle with fresh parsley before serving.
- Serve immediately with pita bread, crackers, or fresh vegetables for dipping.
