Description

A creamy hummus topped with fresh Greek-inspired vegetables, feta cheese, and a drizzle of olive oil for a vibrant and flavorful appetizer or snack.


Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 3 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil, plus more for drizzling
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup water (adjust for desired consistency)
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon fresh parsley, chopped


Instructions

  1. In a food processor, combine chickpeas, tahini, lemon juice, garlic, olive oil, salt, and pepper. Blend until smooth, adding water gradually until the hummus reaches your preferred creamy texture.
  2. Spread the hummus evenly on a serving plate or shallow bowl.
  3. Top the hummus with cherry tomatoes, cucumber, red onion, Kalamata olives, and crumbled feta cheese.
  4. Drizzle with additional olive oil and sprinkle with fresh parsley before serving.
  5. Serve immediately with pita bread, crackers, or fresh vegetables for dipping.
