Description

Fresh and light appetizer skewers featuring creamy feta, crisp cucumber, cherry tomatoes, and Kalamata olives drizzled with a tangy Greek vinaigrette — perfect for parties or a quick snack.


Ingredients

  • 1 large English cucumber, cut into 1-inch chunks
  • 8 oz feta cheese, cut into 1-inch cubes
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh mint leaves for garnish (optional)


Instructions

  1. In a small bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper to make the dressing.
  2. Thread a cucumber chunk, a feta cube, a cherry tomato half, a Kalamata olive, and a slice of red onion onto a short skewer or toothpick. Repeat with remaining ingredients.
  3. Arrange the skewers on a serving platter and drizzle the dressing over the top.
  4. Garnish with fresh mint leaves if desired, and serve immediately at room temperature or chilled.
