Description

Juicy beef meatballs infused with Greek flavors, served with a creamy sun-dried tomato tzatziki sauce. Perfect for a weeknight dinner or party appetizer.

Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 large egg
  • For the tzatziki: 1 cup Greek yogurt
  • 1/2 cup grated cucumber, squeezed dry
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Fresh dill for garnish (optional)

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, grated onion, minced garlic, parsley, oregano, cumin, salt, pepper, and egg. Mix gently until just combined.
  2. Shape mixture into 1-inch meatballs. Place on a plate and refrigerate for 15 minutes to firm up.
  3. While meatballs chill, prepare tzatziki: In a medium bowl, mix Greek yogurt, grated cucumber, sun-dried tomatoes, lemon juice, olive oil, garlic, salt, and pepper. Cover and refrigerate until ready to serve.
  4. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  5. Arrange meatballs on the baking sheet and bake for 20-25 minutes, until cooked through and browned.
  6. Alternatively, heat a large skillet over medium heat with a little olive oil and cook meatballs for 10-12 minutes, turning until browned on all sides.
  7. Serve meatballs warm with the creamy sun-dried tomato tzatziki sauce on the side or drizzled over. Garnish with fresh dill if desired.
