Description

Juicy, lime-marinated chicken breasts are grilled to perfection and topped with a fresh, creamy avocado salsa. This vibrant dish is bursting with zesty flavors and makes a perfect weeknight dinner or festive gathering.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 3 limes, juiced and zested
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 ripe avocados, diced
  • 1/2 cup cherry tomatoes, quartered
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • Salt and pepper to taste


Instructions

  1. In a small bowl, whisk together olive oil, lime juice and zest, garlic, cumin, chili powder, smoked paprika, salt, and black pepper. Place chicken breasts in a resealable bag and pour marinade over them. Seal and refrigerate for at least 30 minutes, up to 4 hours.
  2. Preheat grill to medium-high heat. Remove chicken from marinade and discard excess marinade. Grill chicken for 6-7 minutes per side, or until internal temperature reaches 165°F. Let rest for 5 minutes before slicing.
  3. While chicken grills, prepare avocado salsa: In a medium bowl, combine diced avocado, cherry tomatoes, red onion, cilantro, jalapeño, lime juice, and olive oil. Gently toss and season with salt and pepper to taste.
  4. Slice the rested chicken and serve topped with a generous spoonful of avocado salsa. Garnish with extra lime wedges if desired.

Notes

You can customize the seasonings to taste. For extra heat, leave some seeds in the jalapeño. This dish pairs well with rice or warm tortillas.
