A refreshing and tangy salad featuring creamy feta cheese, sweet dried cranberries, and protein-packed chickpeas, all tossed in a bright lemon vinaigrette.
Ingredients
- 2 cans (15 oz each) chickpeas, drained and rinsed
- 1 cup crumbled feta cheese
- 1/2 cup dried cranberries
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- In a large bowl, combine chickpeas, feta cheese, dried cranberries, red onion, and parsley.
- In a small jar or bowl, whisk together lemon juice, olive oil, Dijon mustard, minced garlic, salt, and pepper to make the vinaigrette.
- Pour the vinaigrette over the chickpea mixture and toss gently to coat.
- Refrigerate for at least 30 minutes to allow flavors to meld before serving.
