Ingredients
- 1 (15 oz) can chickpeas, drained and rinsed
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and halved
- 4 oz feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 3 tbsp extra-virgin olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt and black pepper to taste
Instructions
- In a large bowl, combine chickpeas, cucumber, cherry tomatoes, red onion, olives, feta, and parsley.
- In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper to make the dressing.
- Pour the dressing over the salad and toss gently until everything is evenly coated.
- Let the salad sit for 10 minutes to allow flavors to meld before serving.
