Description

Moist, spiced carrot cake bars topped with a rich, tangy cream cheese frosting—perfect for a sweet treat or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 cup vegetable oil
  • 2 cups grated carrots
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)
  • 8 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan and set aside.
  2. In a large bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.
  3. Add eggs, vegetable oil, grated carrots, and vanilla extract to the dry ingredients. Mix until just combined. Fold in walnuts if using.
  4. Pour batter into the prepared pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted comes out clean. Let cool completely.
  5. For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until creamy.
  6. Spread frosting over cooled bars. Cut into squares and serve.
