Ingredients
- 4 boneless, skinless chicken breasts
- 4 oz goat cheese, softened
- 1 cup fresh spinach, chopped
- 1/2 cup dried cranberries
- 2 cloves garlic, minced
- 1/4 cup chopped walnuts (optional)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish.
- In a bowl, mix goat cheese, spinach, cranberries, garlic, and walnuts if using. Season with salt and pepper.
- Cut a pocket into each chicken breast horizontally. Stuff with the goat cheese mixture.
- Secure with toothpicks if needed. Rub chicken with olive oil, then sprinkle with thyme, paprika, salt, and pepper.
- Place in baking dish and bake for 25-30 minutes, until chicken is cooked through (internal temperature 165°F).
- Let rest for 5 minutes before serving.
