Description

Juicy chicken breasts stuffed with a savory-sweet mixture of spinach, dried cranberries, and creamy goat cheese, then baked to perfection. A delightful main course for any occasion.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 oz goat cheese, softened
  • 1 cup fresh spinach, chopped
  • 1/2 cup dried cranberries
  • 2 cloves garlic, minced
  • 1/4 cup chopped walnuts (optional)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika


Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. In a bowl, mix goat cheese, spinach, cranberries, garlic, and walnuts if using. Season with salt and pepper.
  3. Cut a pocket into each chicken breast horizontally. Stuff with the goat cheese mixture.
  4. Secure with toothpicks if needed. Rub chicken with olive oil, then sprinkle with thyme, paprika, salt, and pepper.
  5. Place in baking dish and bake for 25-30 minutes, until chicken is cooked through (internal temperature 165°F).
  6. Let rest for 5 minutes before serving.
