Description

A moist, tender cake bursting with tart cranberries and bright orange zest, perfect for a cozy morning treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh cranberries, chopped
  • Zest of 1 orange
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt. Stir in cranberries and orange zest.
  3. In another bowl, combine milk, melted butter, eggs, and vanilla. Pour wet ingredients into dry and mix until just combined.
  4. Pour batter into prepared pan and smooth the top. Bake for 30-35 minutes, until a toothpick inserted comes out clean.
  5. Let cool in pan for 10 minutes, then transfer to a wire rack. Serve warm or at room temperature.
