Description

A light, fluffy, and protein-packed crustless quiche made with creamy cottage cheese, fresh spinach, and savory seasonings. Perfect for a quick breakfast, brunch, or a healthy dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 5 ounces fresh baby spinach
  • 6 large eggs
  • 1 cup cottage cheese (small curd)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon ground nutmeg


Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9-inch pie dish.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 4-5 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Add the fresh spinach to the skillet and cook, stirring frequently, until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  4. In a large bowl, whisk together the eggs until well beaten. Add the cottage cheese, mozzarella, Parmesan, salt, pepper, and nutmeg. Mix until combined.
  5. Fold the cooked spinach mixture into the egg mixture until evenly distributed.
  6. Pour the mixture into the prepared pie dish and spread evenly.
  7. Bake for 25-30 minutes, or until the quiche is set in the center and lightly golden on top. A knife inserted into the center should come out clean.
  8. Let the quiche cool for 5-10 minutes before slicing. Serve warm or at room temperature.

Notes

You can customize the seasonings to taste. Substitute mozzarella with cheddar or feta for a different flavor. Make sure to squeeze any excess moisture from the cooked spinach before mixing.
