Description

Ingredients

  • 4 boneless, skinless chicken breasts, pounded thin
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup capers, drained
  • 2 tablespoons chopped fresh parsley
  • Lemon slices for garnish


Instructions

  1. Season the chicken breasts with salt and pepper, then dredge them in flour, shaking off any excess.
  2. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 3-4 minutes per side until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, melt butter. Add chicken broth, lemon juice, and capers, scraping up any browned bits. Simmer for 3-4 minutes until slightly reduced.
  4. Return the chicken to the skillet, spooning the sauce over it. Cook for 1-2 minutes to heat through.
  5. Garnish with chopped parsley and lemon slices before serving.
