Description
Tender artichoke bottoms filled with a creamy, cheesy breadcrumb mixture, baked until golden and bubbly. A delightful appetizer or side dish.
Ingredients
- 2 (14 oz) cans artichoke bottoms, drained
- 1/2 cup cream cheese, softened
- 1/4 cup sour cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup plain breadcrumbs
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh parsley
- 1 tablespoon olive oil
- Salt and pepper to taste
- Extra breadcrumbs for topping
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- In a medium bowl, combine cream cheese, sour cream, Parmesan, mozzarella, breadcrumbs, garlic, parsley, olive oil, salt, and pepper. Mix until well blended.
- Spoon the cheese mixture into each artichoke bottom, mounding slightly.
- Sprinkle extra breadcrumbs over the filled artichokes.
- Bake for 15-20 minutes until filling is heated through and tops are golden brown.
- Serve warm.
Notes
You can customize the seasonings to taste. Add red pepper flakes for heat or swap herbs like basil or oregano.
