Description

Tender artichoke bottoms filled with a creamy, cheesy breadcrumb mixture, baked until golden and bubbly. A delightful appetizer or side dish.


Ingredients

  • 2 (14 oz) cans artichoke bottoms, drained
  • 1/2 cup cream cheese, softened
  • 1/4 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup plain breadcrumbs
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Extra breadcrumbs for topping


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a medium bowl, combine cream cheese, sour cream, Parmesan, mozzarella, breadcrumbs, garlic, parsley, olive oil, salt, and pepper. Mix until well blended.
  3. Spoon the cheese mixture into each artichoke bottom, mounding slightly.
  4. Sprinkle extra breadcrumbs over the filled artichokes.
  5. Bake for 15-20 minutes until filling is heated through and tops are golden brown.
  6. Serve warm.

Notes

You can customize the seasonings to taste. Add red pepper flakes for heat or swap herbs like basil or oregano.
