Description

A savory-sweet side dish featuring tender roasted sweet potatoes, creamy goat cheese, toasted walnuts, and a drizzle of honey for a perfect balance of flavors and textures.


Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1/2 cup crumbled goat cheese
  • 1/3 cup chopped walnuts, toasted
  • 2 tablespoons honey
  • Fresh thyme leaves for garnish


Instructions

  1. Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, smoked paprika, salt, and pepper on a baking sheet.
  2. Roast for 25-30 minutes, stirring halfway, until tender and caramelized at the edges.
  3. Transfer roasted sweet potatoes to a serving dish. Top with crumbled goat cheese, toasted walnuts, and a drizzle of honey. Garnish with fresh thyme before serving.
