Description

A sweet and satisfying twist on breakfast, featuring warm tortillas filled with creamy ricotta, fresh blueberries, and a hint of cinnamon, perfect for a quick morning treat.


Ingredients

  • 4 medium flour tortillas
  • 1 cup ricotta cheese
  • 1 cup fresh blueberries
  • 2 tablespoons honey
  • 1 teaspoon ground cinnamon
  • 1 tablespoon unsalted butter, softened
  • Pinch of salt


Instructions

  1. In a small bowl, mix the ricotta cheese, honey, cinnamon, and a pinch of salt until well combined.
  2. Lay out the tortillas and spread the ricotta mixture evenly over half of each tortilla, leaving a small border around the edges.
  3. Sprinkle fresh blueberries evenly over the ricotta mixture on each tortilla.
  4. Fold the tortillas in half to cover the filling, pressing gently to seal.
  5. Heat a large skillet or griddle over medium heat. Lightly butter both sides of each quesadilla.
  6. Cook the quesadillas for 2-3 minutes per side, or until golden brown and the filling is warm.
  7. Remove from heat, let cool slightly, then slice into wedges and serve warm.
