Ingredients
- 4 medium flour tortillas
- 1 cup ricotta cheese
- 1 cup fresh blueberries
- 2 tablespoons honey
- 1 teaspoon ground cinnamon
- 1 tablespoon unsalted butter, softened
- Pinch of salt
Instructions
- In a small bowl, mix the ricotta cheese, honey, cinnamon, and a pinch of salt until well combined.
- Lay out the tortillas and spread the ricotta mixture evenly over half of each tortilla, leaving a small border around the edges.
- Sprinkle fresh blueberries evenly over the ricotta mixture on each tortilla.
- Fold the tortillas in half to cover the filling, pressing gently to seal.
- Heat a large skillet or griddle over medium heat. Lightly butter both sides of each quesadilla.
- Cook the quesadillas for 2-3 minutes per side, or until golden brown and the filling is warm.
- Remove from heat, let cool slightly, then slice into wedges and serve warm.
