Description

Soft, tender, and bursting with juicy blueberries—these biscuits feel bakery-fancy but come together fast (about 30 minutes).


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup buttermilk
  • 1 cup fresh blueberries
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs.
  3. Gently stir in buttermilk and vanilla until just combined, then fold in blueberries. Drop dough onto baking sheet in 8 equal mounds.
  4. Bake for 15-18 minutes until golden brown. Cool slightly before serving.
