Description

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 4 cups fresh strawberries, hulled and halved
  • 1 cup water
  • 3/4 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • Whipped cream for serving


Instructions

  1. In a bowl, mix graham cracker crumbs, melted butter, and 1/4 cup sugar until combined. Press firmly into a 9-inch pie dish and chill for 30 minutes.
  2. Arrange strawberry halves in the chilled crust, cut sides down, in a single layer.
  3. In a saucepan, whisk water, 3/4 cup sugar, and cornstarch until smooth. Cook over medium heat, stirring constantly, until thickened and clear, about 5-7 minutes.
  4. Remove from heat and stir in lemon juice and vanilla extract. Let cool slightly, then pour over strawberries in the crust.
  5. Refrigerate the pie for at least 4 hours or until set. Serve chilled with whipped cream.
