Description
A classic, no-bake strawberry pie with a sweet, glossy filling and a buttery graham cracker crust, perfect for summer gatherings.
Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/3 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 4 cups fresh strawberries, hulled and halved
- 1 cup water
- 3/4 cup granulated sugar
- 3 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- Whipped cream for serving
Instructions
- In a bowl, mix graham cracker crumbs, melted butter, and 1/4 cup sugar until combined. Press firmly into a 9-inch pie dish and chill for 30 minutes.
- Arrange strawberry halves in the chilled crust, cut sides down, in a single layer.
- In a saucepan, whisk water, 3/4 cup sugar, and cornstarch until smooth. Cook over medium heat, stirring constantly, until thickened and clear, about 5-7 minutes.
- Remove from heat and stir in lemon juice and vanilla extract. Let cool slightly, then pour over strawberries in the crust.
- Refrigerate the pie for at least 4 hours or until set. Serve chilled with whipped cream.
