Description

A vibrant and refreshing salad featuring crisp cabbage, crunchy toppings, and a tangy Asian-inspired dressing that’s perfect for potlucks or a light meal.


Ingredients

  • 4 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • 1/2 cup sliced green onions
  • 1/2 cup chopped cilantro
  • 1/2 cup slivered almonds, toasted
  • 1/2 cup chow mein noodles
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced


Instructions

  1. In a large bowl, combine green cabbage, red cabbage, carrots, green onions, and cilantro.
  2. In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, ginger, and garlic until well blended.
  3. Pour the dressing over the cabbage mixture and toss until evenly coated.
  4. Just before serving, add toasted almonds and chow mein noodles, then toss gently to combine.
