Description

A tender flank steak marinated in a tangy balsamic blend, then topped with a savory blue cheese crust and oven-roasted to perfection.


Ingredients

  • 1 1/2 pounds flank steak
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces blue cheese, crumbled
  • 1/4 cup breadcrumbs
  • 2 tablespoons chopped fresh parsley


Instructions

  1. In a small bowl, whisk together balsamic vinegar, olive oil, garlic, Dijon mustard, rosemary, salt, and pepper. Place flank steak in a resealable bag and pour marinade over; seal and refrigerate for at least 2 hours or overnight.
  2. Preheat oven to 400°F (200°C). Remove steak from marinade and pat dry; discard marinade.
  3. In a separate bowl, combine crumbled blue cheese, breadcrumbs, and parsley. Press mixture evenly onto one side of the steak.
  4. Place steak on a baking sheet lined with foil or a rack. Roast for 20-25 minutes for medium-rare, or until desired doneness.
  5. Let steak rest for 5 minutes before slicing against the grain. Serve warm.
