Description

Juicy chicken breasts are pan-seared and simmered in a tangy balsamic glaze with fresh spinach and cherry tomatoes for a quick and flavorful weeknight dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 4 cups fresh spinach
  • 1/3 cup balsamic vinegar
  • 2 tablespoons honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh basil for garnish (optional)


Instructions

  1. Season chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. In the same skillet, add minced garlic and cook for 30 seconds. Add cherry tomatoes and cook for 2 minutes until slightly softened.
  4. Add balsamic vinegar and honey to the skillet, stirring to combine. Let the sauce simmer for 2 minutes until slightly thickened.
  5. Add fresh spinach and cook for 1-2 minutes until wilted.
  6. Return chicken to the skillet, spooning the balsamic tomato spinach mixture over the top. Cook for 1 more minute to heat through.
  7. Garnish with fresh basil if desired and serve immediately.

Notes

You can customize the seasonings to taste. For a low-carb option, replace honey with a sugar-free sweetener.
