Description

A quick and flavorful one-pan dish featuring juicy chicken breasts simmered in a tangy balsamic glaze with fresh spinach and cherry tomatoes.


Ingredients

  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1/2 cup balsamic vinegar
  • 1/4 cup chicken broth
  • 1 teaspoon honey
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)


Instructions

  1. Season chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden brown (about 5-6 minutes per side). Remove and set aside.
  3. In the same skillet, add garlic and sauté for 30 seconds until fragrant. Pour in balsamic vinegar, chicken broth, and honey. Stir and bring to a simmer.
  4. Return chicken to the skillet, reduce heat to medium-low, and cook for 5 minutes, basting the chicken with the sauce.
  5. Add cherry tomatoes and spinach to the skillet. Cook for 2-3 minutes until spinach wilts and tomatoes soften slightly.
  6. Serve chicken with the pan sauce and vegetables. Garnish with fresh basil if desired.
