Description

A creamy, tangy pasta dish with ricotta cheese, fresh spinach, and a bright lemon flavor, perfect for a quick and satisfying meal.


Ingredients

  • 12 oz pasta (such as penne or fettuccine)
  • 1 cup ricotta cheese
  • 2 cups fresh spinach, roughly chopped
  • 2 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 2 tbsp olive oil
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Red pepper flakes (optional)


Instructions

  1. Cook the pasta according to package instructions in salted water until al dente. Reserve 1/2 cup of pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.
  4. In a bowl, mix ricotta cheese, lemon zest, lemon juice, Parmesan cheese, salt, and black pepper until smooth.
  5. Combine the drained pasta with the ricotta mixture in the skillet. Add reserved pasta water as needed to create a creamy sauce. Stir in the spinach and garlic.
  6. Toss everything together until well coated. Serve immediately, garnished with extra Parmesan and red pepper flakes if desired.
