Description

A bright and creamy pasta dish featuring fresh lemon zest, creamy ricotta, and tender spinach. Quick to make and perfect for a weeknight dinner.


Ingredients

  • 12 oz pasta (such as fettuccine or penne)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 5 oz fresh spinach
  • 1 cup whole milk ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 lemon (zest and juice)
  • Salt and black pepper to taste
  • 1/4 cup reserved pasta water


Instructions

  1. Cook pasta according to package directions until al dente. Reserve 1/4 cup pasta water, then drain.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant.
  3. Add fresh spinach to the skillet and cook, stirring frequently, until wilted, about 2 minutes.
  4. Reduce heat to low. Stir in ricotta cheese, Parmesan cheese, lemon zest, and lemon juice until well combined and creamy.
  5. Add the cooked pasta to the skillet and toss to coat. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  6. Season with salt and black pepper to taste. Serve immediately.
