Description

Creamy no-bake cheesecake balls with a burst of raspberry, coated in smooth white chocolate for an elegant and indulgent treat.


Ingredients

  • 8 oz cream cheese, softened
  • 1 cup graham cracker crumbs
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup fresh raspberries, mashed
  • 12 oz white chocolate chips
  • 1 tbsp coconut oil
  • Extra graham cracker crumbs for rolling


Instructions

  1. In a mixing bowl, combine softened cream cheese, graham cracker crumbs, powdered sugar, and vanilla extract until smooth.
  2. Gently fold in mashed raspberries until evenly distributed, then refrigerate the mixture for 30 minutes to firm up.
  3. Melt white chocolate chips with coconut oil in a double boiler or microwave, stirring until smooth. Roll chilled cheesecake mixture into 1-inch balls, dip each into melted white chocolate, and place on parchment paper to set.
