Ingredients
- 8 oz cream cheese, softened
- 1 cup graham cracker crumbs
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup fresh raspberries, mashed
- 12 oz white chocolate chips
- 1 tbsp coconut oil
- Extra graham cracker crumbs for rolling
Instructions
- In a mixing bowl, combine softened cream cheese, graham cracker crumbs, powdered sugar, and vanilla extract until smooth.
- Gently fold in mashed raspberries until evenly distributed, then refrigerate the mixture for 30 minutes to firm up.
- Melt white chocolate chips with coconut oil in a double boiler or microwave, stirring until smooth. Roll chilled cheesecake mixture into 1-inch balls, dip each into melted white chocolate, and place on parchment paper to set.
