Description

No-bake cheesecake balls with a creamy raspberry filling, coated in white chocolate and graham cracker crumbs.

Ingredients

  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 cup fresh raspberries, mashed
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups graham cracker crumbs, divided
  • 1 cup white chocolate chips
  • 1 tablespoon coconut oil
  • Fresh raspberries for garnish (optional)

Instructions

  1. In a large bowl, beat cream cheese and powdered sugar until smooth. Add mashed raspberries and vanilla; mix well. Stir in 1 cup graham cracker crumbs until combined.
  2. Roll mixture into 1-inch balls and place on a parchment-lined baking sheet. Freeze for 15 minutes or until firm.
  3. Melt white chocolate chips with coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth. Dip each ball into melted chocolate, allowing excess to drip off. Roll in remaining graham cracker crumbs if desired. Place back on baking sheet and refrigerate until chocolate is set, about 10 minutes. Garnish with fresh raspberries if desired.
