Decadent mini cheesecakes with a graham cracker crust, creamy white chocolate filling, and a sweet blueberry swirl, perfect for elegant gatherings.
Ingredients
- 1 cup graham cracker crumbs
- 3 tablespoons unsalted butter, melted
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 4 ounces white chocolate, melted and cooled
- 1/2 cup fresh blueberries
- 2 tablespoons blueberry jam
Instructions
- Preheat oven to 325°F (160°C). Line a muffin tin with cupcake liners.
- Mix graham cracker crumbs and melted butter. Press 1 tablespoon into each liner to form crusts.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and melted white chocolate.
- Spoon filling over crusts. Swirl in blueberries and blueberry jam with a toothpick.
- Bake for 20-25 minutes until set. Cool completely, then refrigerate for at least 2 hours before serving.
