Description

A delightful and creamy appetizer or brunch dish featuring tangy whipped feta topped with sweet and slightly caramelized roasted strawberries. Perfect served with crusty bread or crackers.


Ingredients

  • 8 ounces feta cheese, crumbled
  • 1/2 cup Greek yogurt
  • 2 tablespoons olive oil, plus more for drizzling
  • 1 tablespoon lemon juice
  • 1/2 teaspoon black pepper
  • 2 cups fresh strawberries, hulled and halved
  • 1 tablespoon honey
  • 1 teaspoon balsamic vinegar
  • Fresh mint leaves for garnish
  • Crusty bread or crackers for serving


Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine strawberries, honey, and balsamic vinegar. Toss to coat evenly. Spread strawberries in a single layer on the prepared baking sheet.
  3. Roast strawberries for 15-20 minutes, until soft and slightly caramelized. Remove from oven and let cool slightly.
  4. While strawberries roast, prepare the whipped feta. In a food processor, combine crumbled feta, Greek yogurt, olive oil, lemon juice, and black pepper. Blend until smooth and creamy, scraping down the sides as needed. If too thick, add a tablespoon of water or more yogurt.
  5. Transfer the whipped feta to a serving bowl or plate, spreading it out with a spatula.
  6. Top with the roasted strawberries and any juices from the baking sheet. Drizzle with a little extra olive oil and garnish with fresh mint leaves.
  7. Serve immediately with crusty bread or crackers.

Notes

You can customize the seasonings to taste. For a sweeter glaze, add more honey. For a tangier sauce, increase the lemon juice.
